Drink Me Nat’Cool is the wine that gave rise to Nat’Cool, Dirk Niepoort ‘s project that champions light, fresh and easy-to-drink wines , made with minimal intervention and bottled in liter format . It comes from Bairrada , on the Atlantic coast of Portugal , and is made 100% with Baga , the emblematic variety of the region.
La Baga, often associated with tannic and austere reds, shows its more approachable side here. It contributes crisp red fruit, vibrant acidity, and a floral and spicy profile, while the calcareous soils and Atlantic climate lend freshness and a mineral undertone.
A light Portuguese red wine , pale, casual and with a lot of personality, designed to be enjoyed without complications and without losing the character of its origin.

Drink Me is made with Baga grapes from old vines in Bairrada , planted in clay-limestone soils and influenced by the Atlantic. The harvest is done by hand, and the winemaking follows the Nat’Cool philosophy: minimal intervention, fermentation in stainless steel , and brief aging in the same tank, without oak , to preserve the fruit and freshness of the variety. It is bottled unfiltered and has a moderate alcohol content of around 11.5–12%.
A very versatile red wine that pairs beautifully with cured meats, grilled vegetables, rice dishes, pasta, oily fish, smoked dishes, roast chicken, and soft cheeses. It’s also ideal as an aperitif, for casual meals with friends, or for tapas. Best served slightly chilled, around 12–14°C.
Because it proves that a great producer like Niepoort can make serious wines without taking himself too seriously. Drink Me breaks with the idea that Baga is only good for heavy reds and presents it to us as light, fresh, and full of fruit.
