Atelier 2025

Atalier 2025 is Raúl Pérez’s vision of Albariño from Val do Salnés, a project he shares with his friend Rodrigo Méndez, a leading advocate for old Galician vines. It’s a white wine from the Rías Baixas DO that moves away from the easy-drinking, fruity Albariño, seeking depth, texture, and the purest expression of the Atlantic landscape.

The Albariño comes from very old vines planted just meters from the sea, on sandy and granitic soils. These vines, with their extremely low yields, contribute concentration and character; the granite lends tension and verticality; and the proximity of the Atlantic is evident in its saline and fresh profile. Aging in foudres adds volume and complexity without diminishing its vibrancy.

A serious, vibrant white wine with a lot of personality, which demonstrates how far Albariño can go when it is worked with calm and respect.

Tasting notes

  • Appearance: Pale yellow with greenish reflections, clean and bright.
  • Nose: Aromas of fresh apple, grapefruit, and lemon peel, with notes of white flowers, stone fruit, and a light balsamic touch. In the background, hints of salinity and fine lees.
  • Palate: Fresh and taut on the entry, with a broad and enveloping texture imparted by aging on the lees. Vibrant acidity balances the intensity of the fruit and gives it a long finish. Salin, elegant, and persistent.

Atalier originates from small coastal plots of old Albariño vines near Cambados, in the heart of the Val do Salnés, cultivated in an environmentally friendly way. The harvest is done by hand, seeking the optimal point of ripeness.

In the winery, the grapes are gently pressed and fermented spontaneously with native yeasts in French oak vats of varying sizes. The wine remains in these vats for about 12 months on its lees without undergoing malolactic fermentation, which preserves the natural acidity of the Albariño and the Atlantic character of the region.

A very gastronomic white wine, ideal with seafood, grilled or baked white fish, ceviches, creamy rice dishes with fish or cod, octopus, white meats with mild sauces and soft or semi-cured Galician cheeses.

It’s also a safe bet for an Atlantic cuisine table or for a special meal with seafood.

Why we like it

Because it shows us a different Albariño, with roots in the Galician tradition of aging in large foudres and with the unmistakable signature of Raúl Pérez: precision, depth and absolute respect for the vineyard.

We particularly like its combination of tension, salinity, and texture. It’s a wine for those already familiar with Albariño who want to discover its more complex side, and also for those looking for an aging white wine that will impress at the table.
